Abstract: Dramatic shifts in the global diet, cuisine and consumer preferences will, over coming decades, change the food we eat more profoundly than at any time in history.  Emerging scarcities of water, land, nutrients and fish will combine with climate instability and rising concerns about health and sustainability to herald a major shift in global food systems from extensive, open-air and rural to intensive, indoors, urban and high tech. With water at a premium worldwide, irrigation faces radical change worldwide. This means both threats and great opportunities us in this, The Age of Food.
